Christmas Cake Recipe

This recipe makes 1 cake

Ingredients

5 handfulls of Self-raising flour

2 cups of Butermilk

2 handfuls of currants or raisins soaked in boiling water

1 teaspoon cinnamon

½ cup of water & a dash of whiskey

1/2 cup of self-raising flour

1 handful of cherries

1/2 handful of chopped almonds

1/2 handful orange peel grated

Method

Preheat the oven to:
Gas Mark 6, 200°C (400°F)

ovens 200 degrees

Mix the flour & cinnamon in a bowl

Strain the fruit and add it to the flour & cinnamon

Add the cherries nuts and grated orange

Add the buttermilk and water

The mixture should resemble cooked stir about (porridge)

Little by little add about ¼ a mug of flour, this will dry out the mixture, gently fold and slap the flour into the mixture

Place mixture in a greased cake tin

Bake for 60 – 90 minutes 200°C (400°F)

ovens 200 degrees

The cake should sound hollow when tapped underneath

Cover with a damp tea towel or dish cloth, this will keep the cake nice and soft
